About The Role
Key Responsibilities:
Ensure all dishes are prepared consistently and according to standard.
Assign responsibilities to team members and supervise performance, coaching, and training where necessary.
Check all incoming food items, ensuring they are stored correctly as per hygiene regulations.
Maintain mise-en-place for assigned sections at an appropriate level.
Implement food safety and hygiene practices.
Plan menus and utilize food surpluses and leftovers, considering guest numbers, market conditions, and menu popularity.
Develop and maintain recipes to operate within established parameters.
Monitor quality of dishes throughout preparation and presentation.
Discuss food preparation issues with managers, dietitians, and kitchen staff.
Requirements:
Minimum 2 years work experience in relevant Chef positions in a hotel or restaurant with good standards.
Certificate III/IV in Commercial Cookery or higher qualifications including a Diploma in Hospitality Management.
Good Hygiene Knowledge.
Effective trainer with experience in skills training.
Safe and accurate knife skills.
Knowledge and experience in various cooking methods.
