Nestled in the heart of Brisbane’s CBD, InterContinental Hotel Brisbane will open to guests this winter, offering 321 spacious hotel rooms and suites, all day dining restaurant and lobby bar, outdoor pool, fitness centre and Club Lounge, all in a prime location above Queen Street Mall, perfect for exploring the city’s top attractions. With over 1800 square metres of meeting and events spaces, InterContinental Brisbane offers versatile function rooms and a Grand Ballroom catering for up to 1000 guests, making it a great choice for business and leisure events alike.

As Director of Food & Beverage, you will lead and empower our team to deliver quality service and exceptional standards, across all aspects of F&B operations, including All Day Dining restaurant, Lobby Lounge, Club InterContinental, Event Operations and In-Room Dining.

A little taste of your day-to-day

Every day is different, but you’ll mostly be:

Managing and delegating everyday duties for our team of committed hospitality professionals to ensure the smooth operations across all F&B outlets
Creating and implementing standard operating procedures (SOPs) for the food & beverage department, including service standards, food handling protocols, sanitation procedures, and customer service guidelines.
Hiring and training of food & beverage team including supervisors, waitstaff and bar attendants.
Identifying and establishing relationships with suppliers, negotiating contracts, and ensuring that deliveries are in line with quality standards and budgetary constraints.
Collaborating with the Executive Chef and culinary team to create menus that align with the hotel's concept, target market, and budget.
Work with the management team to establish pricing strategies for food and beverage items that are competitive yet profitable.
Collaborate closely with other departments, such as kitchen, events, and front office, to ensure seamless operations, communicating F&B needs and requirements effectively to other teams.
Manage day-to-day staffing needs, plan and assign work and establish performance and development goals for team members. Provide mentoring, coaching and regular feedback.
Help prepare annual departmental operating budget and financial plans.
Foster positive stakeholder relationships if applicable and assist in providing ongoing information and status reports.
Ensuring that all food and beverage operations comply with relevant health, safety, and sanitation regulations, obtaining necessary permits and licenses and conducting regular inspections to maintain compliance.
What we need from you

Are you refined, personable, knowledgeable, proactive and meticulous?

The successful candidate will need to demonstrate these behaviours every day, whilst having a working experience in an environment focused on guest service within a luxury brand. You'll also have excellent guest relations, extensive food and beverage knowledge and proven expertise running successful operations across multiple large-scale F&B outlets.

Candidates must also have:

8–10+ years in food & beverage operations, with at least 3–5 years in a senior management or director-level role
Proven success in similar roles within luxury or five-star hotels, resorts, or high-end hospitality venues.
Experience overseeing multiple venues—restaurants, bars, in-room dining, banquets, and events.
Degree or diploma in hospitality management, hotel administration, culinary arts, or related fields.
Hold a current Responsible Service of ******* (RSA) certification and Food Handling Certificate
Strong ability to lead, motivate, and coach large, diverse teams.
A deep understanding of luxury service standards and guest experience personalization.
Business acumen including P&L management, budgeting, and forecasting, Cost control (food, labor, inventory), and Revenue growth strategies and upselling.
Familiarity with POS systems, inventory management software, and CRM tools.
Calm under pressure—handling complaints, emergencies, or operational hiccups without disruption.
Knowledge of global culinary, mixology, and service trends with the ability to innovate and adapt proactively.
Full working rights in Australia without restrictions.
Fluent in the English language; extra language skills would be great, but not essential.
Impeccable grooming standards and good personal hygiene.
Physical fitness as you’ll be on your feet most of the day. Sometimes you’ll need to lift, push and pull objects, such as tables up to 23 kg – we have the equipment to support you and keep you safe.
