Details of Culinary Lead / Head / Executive Chef , Bangalore
• Required experience- 15 + years
• Graduate from a good institute (preferably IHM)
• Should have experience of bulk catering & exposure to specific cuisine of the region
• Both Culinary Lead, Bangalore ( Onsite & offsite) would be directly reporting into this person.
• Communication skills should be excellent

Overall Purpose of the Role

Lead the Culinary Agenda at the Region. Drive the food programs and culinary value proposition deployment for all sites. The role guides and partners with the site lead chefs site to deliver the culinary operations. Also oversees aspects such as Health, Safety, Food Hygiene regulations, food cost and quality through training, process and People Leadership.

Key Accountabilities

Partner regional operational lead & Innovation team as culinary representative.

Financial Leadership

o Meet all financial & HSEQ targets set for the region.

o Drive the profitability of the region through culinary excellence

o Enhance participation at the sites through culinary innovation & quality (Introduction of food programs)

o Drive LFL growth at the sites through Special Occasions/Food Festivals & Consumer Engagement.

Operational Excellence

o Review & guide the sites to plan culinary operations better

o Study the P&Ls for Key sites and monitor food cost as per plan. Suggest measures to maintain standardization and control

o Govern success of curated food programmes through Sales & COGS monitoring. Review and advise on BOH Planning

o Guide unit chefs for the forecast/ordering/production

o Guide on Trim Trax and review regularly

o Ensure optimal deployment of team size & quality of Unit Chefs

Safety Leadership

o Drive safety culture within the teams

Client Value Proposition

Enhance consumer experience of Compass Culinary through-

o Presentation of the new concepts

o Consumer engagement activities

o Adherence to food festival calendar

o Chef's table/ Master Chef

o Build a Culinary vision for the team.

Ensure Culinary quality & consistency by-

o Monitoring internal site tasting feedbacks

o Review /Calibrate the portion sizes resulting in better Cost Management.

People Leadership

· Mentor site chefs & Nurture talent

· Ownership of selection, training and on-boarding of culinary team

· Improve capability of team

· Acting as a role model. Engage and retain the staff

· Drive Referrals and Help retaining key talent

Process Improvement

Culinary and Food Programs-

o Quality roll out of new food programs

o Market level revamp of non-curated food program

o Calibration and organize refresher training on the curated food programs

o Adoption of food programs by site teams

o Ticket to launch

· Assess Risk and Proactively engage stakeholders to identify potential opportunity areas during scoping

· Support mobilization team for efficient rollout

· Champion culinary research and use of alternatives/ substitutes/ innovative cooking methodologies etc. to drive lean operations

· Passionate about food, culinary methods and customer service.

· Competent to work within or lead, manage and develop the team

· Acts in line with guidelines and procedures, to ensure the team operates to it’s maximum potential

· Always strives to deliver above and beyond the expectations set by management, customer and client

· Has a proven desire for the delivery of the highest quality of service and food offer obtainable

· Has the drive to ensure that all results are attained in the most professional and honest manner

· Should be open to travel

Essential requirements

· Experience in an Exec or Head Chef role at a similar level. Should also experience in Multi Site/Industrial catering

· Should have some experience in leading a culinary proposition for a QSR Chain/Retail or like

· Experience of leading a successful team

· Demonstrate innovation and strategic direction in food planning and menu development

· Knowledge of working to a budget

· Food Hygiene Certificate
