Key Responsibilities
Inspire, lead, and develop the kitchen brigade—supporting their growth and professional development.
Maintain a safe and compliant kitchen in line with council regulations and internal policies.
Manage rosters efficiently to deliver high service standards while meeting wage budgets.
Deliver consistently high-quality food during both peak and off-peak periods—even in your absence.
Develop and refresh seasonal menus for both à la carte dining and functions.
Follow HR procedures around recruitment, onboarding, and performance management.
Work closely with the Venue Manager to support key functions, activations, and promotions.

We’re after a passionate and driven kitchen leader ready to take ownership of day-to-day kitchen operations at the Carlton Brewhouse.
You bring:
A strong background in pub-style à la carte service and function catering
A knack for elevating the classics with fresh ideas and flavours
Experience leading and mentoring kitchen teams
A positive, solutions-focused attitude and a collaborative leadership style
Formal culinary qualifications
A love of great food, a strong sense of team, and an eye for quality
You’ll lead by example, bring energy and joy to the role, and foster great communication between the kitchen and front-of-house.
