About Honest Weight
Honest Weight is a 24-seat fishmonger-slash-seafood restaurant in Toronto’s Junction neighbourhood, celebrated for its ever-changing menu, meticulous fish counter, and warm, neighbourhood feel. We showcase responsibly sourced Canadian and global catch in creative dishes that let the seafood shine.
With a loyal following (Google 4.7★; +0 % 5-star reviews) and various other mentions, our little room punches far above its size. We’re now looking for a Head Chef who shares our obsessive love of the ocean, thrives in a tight-knit kitchen and wants to connect directly and personally with our customers.
What You’ll Do
Lead a Small, Mighty Team – Manage and mentor a 5-to-7-person kitchen team, fostering a collaborative culture where everyone participates in all aspects of the kitchen.
Own the Menu – Build seasonal à-la-carte specials that celebrate lesser-known species while honouring crowd-favourites l
Champion Sustainable Sourcing – Work directly with our trusted purveyors to secure traceable product and minimise waste through whole-fish utilisation.
Deliver Consistent Excellence – Set and maintain exacting standards for flavour, presentation, portioning, and timing—our regulars know when something’s off.
Run an Efficient, Profitable Kitchen – Oversee ordering, inventory, and COGS; schedule staff for a six-day service week (Tue–Sun) that balances busy weekends with chef-life sustainability.
Collaborate on the Guest Experience – Partner with front-of-house to craft wine-pairing notes, oyster-bar experiences, and an elevated retail experience.
Safety & Compliance – Uphold PHO, fire-code, and allergen protocols; maintain our spotless health-inspection record.
What We’re Looking For
Seafood Authority – 5+ years in a seafood-forward kitchen, including at least 2 years in a Head/Executive Sous role; confident with filleting, ageing, dry-brining, curing, smoking and live-shellfish handling.
Leadership in Close Quarters – Ability to coach, inspire, and give clear feedback in a line where every word carries.
Business Acumen – Proven track record of meeting food-cost and labour targets without compromising quality.
Certifications – Food Handler’s, WHMIS; Red Seal or equivalent an asset.
Community Spirit – Eagerness to greet returning diners by name and represent Honest Weight at outside events
