Head Of Pastry - Up to £55,000 + Benefits, Central Production Kitchen - SE London Areas
IMMEDIATE START
An exciting opportunity has arisen for an experienced Head Of Pastry to join an upmarket Italian restaurant company already established in London. The restaurants offers locally sourced fresh food with regular menu changes and a number of delicious desserts. The client and is proud of their strong customer relationships and friendly atmosphere. They are looking for an experienced Head Of Pastry who can deliver the highest levels of quality desserts to their refined customers. They are looking for like-minded individuals who have worked in similar quality dining large scale restaurants/production kitchens with experience at Pastry Chef level to join their team on a permanent basis.
Requirements
• Passion for cooking with Italian Pastry
• Be able to prepare, portion control, control wastage, follow H&S measures, control GP's & be able to follow recipes to company standards
• Have a creative flair
• Understand the importance of time management and working in a fast paced production kitchen
• Managing a small team
• Be able to prepare and bake a number of Italian desserts & cakes from scratch and manage the production line in a timely manner
• Experience in Italian desserts would be desirable
• Used to working in a high volume environment
• Develop and refine recipes for traditional and innovative Italian pastries & cakes
• Likes to train and develop others
• Understands the subtle ways that different flavours work
• MUST have experience in Pastry in a large scale kitchen or production kitchen
• Likes to be hands on and lead the team from the front
• Experience with GP, costing, wastage management, ordering, stock control etc.
• Strong health & safety knowledge
• A stable work history
