Job Title: Tandoor Commis 1 (Indian Cuisine)
Department: Kitchen
Reports To: Tandoor Chef / Sous Chef / Head Chef
Job Summary
The Tandoor Commis 1 is responsible for assisting in the preparation and cooking of authentic Indian tandoor dishes, ensuring high food quality, consistency, and hygiene standards. This role supports senior chefs in daily kitchen operations and maintains smooth service during shifts.
Key Responsibilities
• Assist in preparing and cooking tandoor items such as naan, roti, kulcha, kebabs, tikka, and tandoori breads
• Operate and maintain the tandoor oven safely and efficiently
• Prepare marinades, doughs, and mise en place as instructed
• Follow standard recipes and portion control guidelines
• Maintain cleanliness and organization of the tandoor section
• Comply with food safety, hygiene, and sanitation standards
• Assist in stock rotation and proper storage of ingredients
• Support senior chefs during busy service periods
• Minimize food waste and report any quality issues
Requirements & Skills
• Prior experience in Indian tandoor cooking (preferred)
• Basic knowledge of Indian spices, breads, and tandoor techniques
• Ability to work in a hot, fast-paced kitchen environment
• Good teamwork and communication skills
• Willingness to learn and follow instructions
• Basic understanding of food safety and hygiene practices
Qualifications
• Culinary training or relevant kitchen experience preferred
• Minimum 1–2 years experience in Indian cuisine (tandoor section ideal)
Physical Requirements
• Ability to stand for long hours
• Ability to lift kitchen supplies and work near high heat
