Kitchen Manager/Cook
BACKGROUND: Troika Foods (2000) Ltd. is a privately owned company from Sherwood Park, Alberta, Canada. Founded in 2000, Troika Foods operates a state-of-the-art, federally inspected, HACCP approved food manufacturing facility. We provide many products across Canada.
We are looking for a seasoned professional who can run and manage a busy industrial Kitchen. The individual will be a hands on cook/chef who is able to make large scale food items including a variety of sauces and mixes for industrial production.
The successful candidate will work up to 8.5 hours per day.
Be able to follow standards recipes and cook large scale sauces and mixes
Should be able to address inventory management, supervision of staff, large scale cooking, scheduling, and management of the kitchen
Achieve a high level of cleanliness and sanitation in the kitchen.
Address minor mechanical and maintenance issues
Conversant with allergens and associated controls .
Operate in an industrial kitchen by using large kettles, steamers, and skillets.
Follow cleaning procedures outlined in the SOPs (Rinse, Soap, Sanitize, Dry)
Must be a HANDS on manager
Required Education, Skills and Qualifications:
Previously work in a large kitchen and has a good understanding of kitchen management
Must be able to withstand 10 degree Celsius temperatures
Basic math skills
Lift up to 50lbs
Able to physically stand for up to 8 hrs at a time in a warm environment
Be able to read and write in English.
