About The Role

We are looking for an experienced Senior Chef ready to take on the next step in your career and utilise your culinary skills and develop managerial capabilities.

You will be accountable for overall success of the daily kitchen operations and have the ability to be Acting Head Chef when required. Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions. Works to continually improve guest and employee satisfaction while maintaining the operating budget. Supervises all kitchen areas to ensure a consistent, high quality product is produced.

Main Responsibilities

Hands on management of the day-to-day operations of the Kitchen.
Manages Kitchen shift operations and ensures compliance with all food & beverage policies, standards and procedures.
Excellent organisational and communication skills are essential.
Excellent delegation and leadership skills.
In-depth understanding of Food Safety & Hygiene Practices.
Motivate, inspire and engage your team to achieve personal and professional goals
Perform administrative duties such as purchasing, finance and payroll
Prepares and cooks foods of all types on a regular basis
Develops, designs, or creates new applications, ideas, relationships, systems or products.
Assists with the training and guidance of culinary employees
Plan and distribute the weekly roster and work schedules in a timely manner, ensuring the kitchen is adequately staffed
Oversee and maintain a high level of kitchen hygiene and occupational health and safety
Ensures compliance with all applicable laws and regulations.

Qualifications

Previous experience in a hotel or restaurant.
Certificate III in Commercial Cookery (or equivalent)
Hands on leadership skills that fosters a positive Hyatt culture resulting in a team that is inspired to achieve results
Exceptional interpersonal and communication skills
Proven knowledge and experience in all operational and functional aspects of kitchen administration
Ability to manage labor and food costs within a budget
Strong focus on OH&S and Food Safety Systems.
