About The Role
As the Sous Chef, You will thrive in a large open kitchen and be passionate about cooking and have strong knowledge of local ingredients and independent suppliers. You assist in managing a team of 15 across two dining periods (breakfast/dinner) and work closely with both the front and back of house teams.

You will report directly to the Chef de Cuisine/Executive Chef and support in supervising and managing the day to day operations as well as supporting the team to achieve our purpose.
Some Of The Responsibilities Include
Prepare, create and present all dishes for the restaurant
Ensure all dishes from the section are prepared consistently and according to standard
Assign responsibilities to subordinates and to check their performance periodically
Assist in maximizing employee morale and productivity
Review and analyze menu’s, recipes and food to determine costs, profitability and success of the outlet
Assist in the training and guidance of culinary employees
Conduct monthly inventory checks on all operating equipment and supplies
What You Will Bring To The Role
Hatted restaurant experience would be advantageous
Certificate III in Commercial Cookery (or equivalent)
Previous supervisory experience in a hotel or similar position in a fast-paced environment
Qualifications / certificates in HACCP, local Food handling & Hygiene would be advantageous
A strong attention to detail and the desire to produce high quality operational and administrative outcomes
Excellent interpersonal and communication skills with the ability to lead a team
The ability to create a positive first impression with an understanding of the importance of 5 star grooming standards
The flexibility to work on a 24/7 rotating roster including public holidays
