Food & Wine has named Cupcake Royale one of the best cupcake bakeries in the country. Following COVID, we streamlined our business to focus exclusively on cupcakes and related treats.

USDA WA commissary bakery serving 5 pickup locations across Seattle and the Eastside
A café location on Capitol Hill
A new location opening soon at SEA Airport As we prepare for this next phase of growth, we are seeking a Bakery Manager to strengthen our production operations and help ready the business for increased volume and scale.

The Role of the Bakery Manager

Is a key leadership role responsible for overseeing all bakery production operations. This person ensures that Cupcake Royale delivers consistent, high-quality products while operating efficiently and profitably. This role partners closely with retail operations, marketing, delivery, and company leadership. As we prepare for SEA Airport, the Bakery Manager will play a critical role in improving systems, optimizing labor and costs, and scaling production without sacrificing quality. This is a hands-on leadership role—you will lead from the floor, not the sidelines.
KEY RESPONSIBILITIES

Production & Operations

Oversee all bakery production, including cupcakes, frostings, babycakes, and related products
Develop and manage production schedules to meet daily demand across all locations
Ensure consistent execution of recipes, presentation, and quality standards
Optimize production efficiency, labor utilization, and workflow
Proactively plan for seasonal demand, holidays, promotions, and special events
Manage waste, spoilage, and yield on a daily basis.
Inventory Costing & Systems

Own ingredient ordering, inventory management, and cost control
Ensure COGS targets are met and inventory is always in stock Improve inventory & production systems and documentation to support scale
Partner with leadership to optimize recipes and production methods for efficiency and consistenc
Product Development

Support new product launches and limited-time offerings
Ensure new products are scalable, cost-effective, and operationally sound
Collaborate with marketing and retail teams on rollouts and execution
Leadership & Team Management

Hire, train, coach, and develop bakers, frosters, and delivery staff
Build a strong, collaborative, and accountable team culture
Schedule staff in alignment with production needs and labor goals
Provide regular performance feedback and address issues promptly and respectfully
Lead with integrity, empathy, and clarity
Facility, Safety & Quality

Maintain a clean, organized, and safe bakery environment
Ensure compliance with all food safety, health, and sanitation standards
Oversee routine cleaning, maintenance, and equipment needs
WHAT WE ARE LOOKING FOR

Experience & Skills
5+ years of bakery or food production management experience in a fast-paced environment
Proven experience managing teams and production workflows
Strong understanding of food costing, inventory management, and labor optimization
Experience scaling production while maintaining quality
Excellent organizational and problem-solving skills
Ability to manage multiple priorities in a dynamic environment
Strong communication skills—able to work effectively across teams.
