Job description
Position: South India Chef
Key Responsibilities:
1. Food Preparation & Cooking-
• Prepare all varieties of Dosas (Plain, Masala,Special, etc.) as per standard recipes.
• Prepare dosa batter, aloo bhaji, chutneys, sambar, and accompaniments as per company SOPs.
• Ensure uniform taste, texture, color, and size of dosas.
• Maintain correct temperature and cooking time for dosa tawa and other equipment.
• Ensure zero wastage and proper portion control.
2. Kitchen Operations & All-Rounder Support-
• Support preparation of other menu items if required (Idli, Vada,etc.).
• Assist in prep work: cutting vegetables, grinding batter, storage, and pre-opening preparation.
• Support peak-hour operations to ensure fast service and smooth workflow.
• Help in packing and plating food for dine-in and takeaway orders.
3. Hygiene, Quality & Food Safety-
• Maintain personal hygiene: clean uniform, apron, gloves, hair cap, and trimmed nails.
• Ensure daily cleaning of tawa, counters, utensils, burners, exhaust, and storage racks.
• Maintain proper FIFO method for raw material usage.
• Immediately report any quality, spoilage, or equipment issues to the manager.
4. Inventory Handling & Stock Support-
• Assist in checking daily raw material availability (batter, vegetables, oil, masala, etc.).
• Ensure correct storage of raw materials in freezer, chiller, and dry storage.
• Inform the manager about low stock or wastage issues.
• Follow portioning and measurement standards to control food cost.
5. Equipment Handling & Safety
• Operate dosa tawa, burners, grinders, refrigerators, and other kitchen equipment safely.
• Switch off equipment properly after use.
• Follow safety practices to avoid burns, slips, and accidents.
• Immediately report breakdowns or safety risks.
6. Opening & Closing Duties
• Assist in opening duties: batter checking, equipment setup.
• Assist in closing duties: cleaning, storage, waste disposal, and shutdown procedures.
• Ensure kitchen readiness before service hours.
Skills & Competencies Required
• Excellent South Indian dosa preparation skills
• Fast and efficient working style
• Ability to multitask in a QSR environment
• Strong understanding of hygiene and food safety
Experience & Qualification
• Minimum 1-2 Years experience as a South Indian Dosa Chef
• Experience in QSR / high-volume kitchens preferred
Physical & Work Requirements:
• Ability to stand for long hours
• Ability to work in hot kitchen conditions
• Willingness to work in shifts, weekends, and holidays
