Job Description
We invite applications from passionate and detail-driven Commis Chefs – Cook Grade 3 (Pastry) to join our distinguished pastry team within a five-star hospitality environment.
This full-time role will initially be dedicated to early morning breakfast service, a cornerstone of the guest experience in luxury hotels. Over the first 3–4 months, the successful candidate will work a fixed early morning - breakfast roster, developing precision, consistency, and excellence in high-volume, high-standard service. This will be followed by structured cross-training across all sections of the pastry department, offering exposure to refined à la carte, banquet, and specialty pastry operations and supporting long-term career progression.
Key Responsibilities:
Produce and bake premium breakfast pastries to five-star brand and presentation standards
Execute the setup, presentation, and ongoing maintenance of the breakfast buffet at Cliveden Restaurant
Plan and deliver breakfast buffet operations for high-profile banquets and special events
Prepare and manage dedicated gluten-free breakfast stations, ensuring absolute compliance with food safety standards
Maintain flawless buffet presentation throughout service, including timely refilling and backup production
Prepare refined à la carte desserts with attention to detail and consistency
Support daily pastry mise en place for both restaurant and banquet operations
Assist in the production of luxury cakes, desserts, pastries, and bakery items, including doughs, creams, fillings, and components
Uphold impeccable standards of personal hygiene, food safety, and kitchen organisation
Collaborate closely with the pastry brigade, communicating effectively with senior chefs and contributing to a culture of excellence
Assist with inventory control, stock rotation, and waste minimisation
Qualifications
About You:
Qualification: Certificate III in Patisserie (or equivalent) preferred.
Experience: Previous experience within a pastry kitchen, ideally in a hotel or fine-dining environment.
Technical Skills:
Foundational proficiency in classical and modern pastry techniques, including baking, shaping, and tempering.
Strong attention to detail and an appreciation for refined presentation.

Roster & Availability
Flexibility to work a 7-day rotating roster, including:
Early Morning starts.
