Located in the heart of St Kilda, the Village Belle Hotel is an iconic, heritage-listed pub that’s been part of the local fabric since 1891. Recently renovated, the venue is a multi-level space featuring a bustling public bar, vibrant beer garden, restaurant and late-night cocktail lounge.
The food offering centres around elevated pub classics and modern Australian dishes, with a strong focus on quality local produce and consistent execution across high-volume service.
The Role
We’re on the hunt for a hands-on, commercially savvy Head Chef to take full ownership of this high-profile St Kilda venue.
You’ll be responsible for:
Leading and developing a strong kitchen brigade
Driving food quality, consistency and service standards
Managing rostering, labour and food cost in line with budgets
Overseeing menu development and seasonal updates
Ensuring smooth execution across high-volume service
Maintaining food safety, compliance and systems
What We’re Looking For
Proven experience as a Head Chef or strong Sous ready to step up
Background in high-volume, fast-paced kitchens
Strong leadership and team development skills
Solid financial acumen (costings, labour, stock control)
Ability to deliver consistent, quality pub-style food
A hands-on, positive and solutions-focused approach
