POSITION OVERVIEW:
The Junior Pastry Sous Chef at LPM Miami will assist the Head Pastry Chef in creating and executing dessert menus, helping with managing pastry operations, inventory, and ensuring the highest quality of pastries and desserts. The role focuses on maintaining kitchen efficiency, helping with training team members, and fostering a creative and productive environment.
RESPONSIBILITIES:
• Assist the Head Pastry Chef in designing and developing innovative pastry menus, ensuring seasonal ingredients and high standards.
• Oversee daily pastry operations, including baking, assembling, and plating desserts.
• Ensure consistency and excellence in all desserts served at the restaurant.
• Assist junior pastry staff, helping them develop their skills and maintain kitchen standards.
• Ensure proper stock levels of pastry ingredients, ordering supplies as needed.
• Adhere to food safety and hygiene regulations, ensuring all pastry stations are compliant.
• Collaborate with the culinary team to coordinate dessert offerings with the restaurant's menu.
• Assist in developing new dessert concepts and recipes, ensuring creativity and relevance to current trends.
• Maintain a clean and organized pastry kitchen at all times.
• Ensure minimal waste through effective inventory and portion control.
• Assist in managing costs and maintaining the budget for the pastry department.
QUALIFICATIONS:
• Proven experience as a Pastry Chef or Junior Pastry Sous Chef in an upscale restaurant or similar environment.
• 3+ years of experience in a high-volume fine dining setting
• At least 1 year of experience in a management/leadership role
• Experience in managing kitchen staff and inventory
• Knowledge of health and safety standards for food preparation and storage
• Excellent time management and organizational skills.
