Qualifications Required: Hotel management degree.
Experience Required: Minimum of 5 years of experience handling a team in Pastry with high volume food production, with good knowledge of different types of pastry, dessert, cake decorating.
Other skills required: Well versed with Microsoft Office.
Job Responsibility: Responsible for overall production at Central Kitchen and ensuring products manufacture as per the standard and developing new recipes and menu design, and overall staff management and training. Key accountabilities are
• Plan, implement and manage daily kitchen operations.
• Supervise and coordinate all pastry and dessert preparation and presentation.
• Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget
• Work on recipes for new menus.
• Prepare goods on the organisation’s menu by strictly following recipes and SOPS.
• Ensure that all food preparation is in accordance with regulatory and health guidelines.
• Identify staffing needs and help recruit and train personnel
• Ensure excellent quality throughout the dessert offerings
• Coordinate with the sales & marketing teams for special & corporate orders and ensure their timely Execution.
• Investigate complaints with the help of the quality team and implement preventive action.
• Report all equipment problems and maintenance issues, known safety hazards, or unsafe practices and procedures to the supervisor immediately.
• Plan the team’s weekly roster and look closely at scheduling work.
• Guide and motivate the team to work more efficiently
• Document and maintain records of daily production, wastage, dispatch and inventory
• Ability to work a variety of shifts including weekends, days, afternoons and evenings.
