This is a full-time on-site role for a Chef Exécutif specializing in Pâtisserie and Boulangerie, based in Mumbai. The role involves creating innovative bakery and pastry menus, overseeing kitchen operations, and ensuring high-quality standards. Key responsibilities include supervising kitchen staff, managing inventory, maintaining hygiene protocols, and ensuring consistency in taste and presentation across all products. The chef will collaborate with the management team to develop new recipes and adapt them to client preferences and market trends.
Develop and execute a forward-thinking pastry & bakery menu aligned with brand identity
• Lead R&D for new products, seasonal offerings, and signature items
• Production & Operations
• Oversee daily production of pastries, desserts, breads, and baked goods
• Maintain efficiency in workflow, equipment usage, and kitchen organization
Quality Control
• Implement strict quality checks for ingredients, preparation, and final output
• Ensure adherence to hygiene, food safety, and storage standards
• Monitor shelf life and product performance
Team Management & Training
• Recruit, train, and mentor pastry and bakery teams
• Conduct regular skill development and performance evaluations
Cost & Inventory Management
• Control food costs, wastage, and portioning
• Source high-quality ingredients while maintaining cost efficiency
• Brand & Business Alignment
• Collaborate with marketing for product launches and promotions
• Proven experience as a Head or Executive Pastry Chef / Bakery Chef
• Experience in high-volume or multi-outlet operations preferred
• Ability to balance creativity with commercial viability
Culinary degree or equivalent professional training
Experience in premium cafes, bakeries, or restaurant brands
Exposure to menu development and brand building
