Pasta Privato is the newest destination from our hospitality group, the team behind The Berczy Tavern and Notte Ristorante. Nestled intimately within the Notte Ristorante space at * Church Street, Pasta Privato is a dedicated 30-seat dining room focused exclusively on a high-end Italian pasta tasting menu.
Located in the heart of the historic St. Lawrence Market neighborhood, our restaurant sits at the intersection of Old Town charm and modern culinary innovation. Steps away from the iconic market and the vibrant energy of Front Street, Pasta Privato offers an escape into a refined, ******** setting within one of Toronto's most storied culinary districts. We are seeking an elite Sommelier Manager to lead the beverage program for this sophisticated, small-scale concept.
The Standard: Proactive Leadership
Our team operates with a proactive, never reactive, mindset. This is a senior leadership role for a professional who leads by example and is fully immersed in the flow of service. We are looking for an "experience maker" who stays ahead of guest needs and operational requirements through direct action and anticipation. There is no room for passive management; you are expected to be the driving force on the floor.
Role Overview
Location: * Church Street, Toronto, ON.
Compensation: $80,000 – $100,000 per annum. Base salary + gratuities.
Schedule: 5 days per week.
1 Administrative Day: Collaborating with the Executive Chef to review weekly menus and curate precision wine pairings.
4 Service Days: Leading the floor and managing the guest experience.
Reporting: Reports directly to the General Manager and Owners.
Key Responsibilities
Beverage & Pairings
Design and execute weekly wine and spirit pairings that complement a rotating Italian pasta tasting menu.
Manage all wine and beverage ordering specifically for the Pasta Privato program.
Maintain a high-strength beverage program with a deep focus on Italian viticulture, spirits, and traditional products.
Operations & Leadership
Lead a small, high-performance front-of-house team during service.
Manage all front-of-house scheduling for the Pasta Privato team.
Oversee administrative duties including inventory management and cost control for the beverage program.
Service Excellence
Act as the primary "experience maker" on the floor, focusing on guest detail and storytelling rather than simple order-taking.
Maintain a constant, proactive presence on the floor, anticipating guest needs and service pivots before they occur.
Ensure a seamless, ******** service flow within the 30-seat dining room.
Mandatory Qualifications & Requirements
This is not an entry-level position. We are seeking a seasoned professional with a proven track record.
Experience: Minimum of 5 years of professional experience specifically focused on wine, Italian viticulture, and complex food pairings.
Certification: Sommelier Certification is mandatory (CMS, WSET, or equivalent). No certification, no opportunity.
Expertise: Deep, expert-level knowledge of Italian wines, spirits, and food culture.
Work Ethic: A "lead from the front" mentality with a focus on high-detail, proactive service.
