Primarily responsible for calculating costs of food and beverage items. Responsible for the short and long-term planning of the F&B controlling and pricing aspects. To record information and produce control reports periodically to help maintain a suitable inventory of food and beverage items. Oversee and manage work load of the team and develop effective time management skills for department personnel. Conduct probationary and annual performance reviews in a timely manner, ensuring KPI's are established. Food & Beverage Able to effectively control the Food & Beverage cost and inventory holding. Control the Food and Beverage outlets in terms of wastage, pilferage, and efficiency. Prepare variance analysis for food & beverage and communicating with concerned departments. Update and maintain recipes in the system. Check and verify voids / discounts / complimentary sales / staff duty meals and staff discount in the POS system. Check and verify any other promotions / activations / party package / settlements in the POS system. Check the cost of sales in all F&B outlets and ensure that the costs are within budget. Check the menu pricing on the POS system and ensure the correct prices are loaded. Reporting & Administration Responsible for timely monthly F&B Reports and circulate to concerned department / management. Responsible for surprise spot checks at all F&B outlets. Prepare duty meal, complimentary and discount MIS and circulate to concerned department / management. Keep a check on purchasing functions, quotations and quality. Prepare purchase savings analysis report and circulate to management. Continuously improve F&B control implemented at the outlets and provide suggestions for improvements. Keep a check on inventory holding and circulate the analysis report of slow and non-moving to the concerned department to help in taking corrective action. Active participation in developing and implementing the POS and Inventory software. Work Ethic Lead by example and act as a role model. Ensure all work practices are carried out in a professional, ethical and transparent manner. Communicate regularly and effectively with all department
