Job description, work day and responsibilities
A Kitchen Commis 1 is a more advanced, senior-level entry position within the kitchen brigade, typically one step above a commis 2 or an apprentice. This role is for individuals who have gained some experience in the kitchen and have developed foundational cooking skills. The Commis 1 is expected to be more independent in their duties and capable of taking on more complex tasks compared to a lower-level commis.
Key responsibilities of a Kitchen Commis 1:
• Food Preparation & Cooking: A Commis 1 is often responsible for preparing ingredients, as well as cooking simple dishes or components of a meal under the supervision of the sous chef or chef de partie. This can include grilling, sautéing, frying, or other basic cooking techniques.
• Assisting Chefs: They are required to assist in various areas of the kitchen, rotating through different stations such as the grill, pastry, sauce, or vegetable sections, depending on the restaurant's needs.
• Maintaining Quality Control: While working on their designated station or tasks, Commis 1 chefs are expected to ensure that food is prepared and cooked to the establishment's standards, following recipes and portion sizes precisely.
• Cleaning and Organization: They are also responsible for keeping their station clean, organized, and sanitized. This includes cleaning tools, equipment, and countertops and ensuring that all safety and hygiene standards are met.
• Stock Management: Commis 1 chefs assist in managing inventory, ensuring that ingredients are properly stored and used within their shelf life, and notifying supervisors when stocks are running low.
Skills and Requirements:
• Technical Skills: Knowledge of basic cooking techniques, knife skills, and the ability to follow recipes and instructions with precision.
• Speed and Efficiency: The ability to work efficiently in a fast-paced environment, especially during busy service times.
• Attention to Detail: Ensuring all dishes are presented and prepared to a high standard.
• Teamwork: A strong ability to work collaboratively within a kitchen team, following directions from higher-level chefs.
A Kitchen Commis 1 typically acts as a stepping stone for those wishing to progress to more senior roles in the kitchen, such as Chef de Partie or Sous Chef.
