Korea Foods Company is a family-owned importer, distributor, and retailer of Korean and other Asian food. We are the largest importer of Korean food in Europe, distribute to 1200 wholesale customers, including the major multiples, and operate 1+ retail shops in the UK.

Contract : Full time, permanent
Working hours: 45 hours per week (6 days per week, weekend availability is required)
MAIN PURPOSE AND SCOPE OF THE JOB
The Head Chef is responsible for preparing sushi and ensuring that the standard and quality of the food production and the hygiene within the department is maintained at the highest level at all times.
Duties and Key Responsibilities: Supervise the preparation of all food
Prepare fresh ingredients by hand and knife, including meat and raw fish products
Preparing Sushi, Sashimi and other Japanese dishes, both hot and cold.
Accurately labelling products ensuring lawful compliance around food safety and allergen compliance each shift
Ensure products are produced on time, and sufficient quantities are available for the sushi kiosk
Prepare daily products as per the recipe
Ensure Health and Safety and Food Safety Standards are maintained in line with compliance
Teach new staff skills they require to perform their roles to the required standard
Delegate duties to kitchen assistant as per the recipe requirements
Maintain stock levels of all kitchen supplies
Ensure wastage is minimised by careful supervision of food preparation methods
Ensure proper hygienic storage methods are utilised to prevent food loss
Oversee the ordering and control of stock levels
Highly organised and comfortable working in a fast paced and high-pressure environment
Carry out other tasks as required by the Shop Manager
Pay careful attention to the operating budgets of the sushi kiosk to ensure that costs are controlled to maintain the correct levels of spending
PERSON SPECIFICATION
Must have over 2-year experience as a Sushi Chef, proven experience with fish cutting to a high level
Adhere to and understand Food Hygiene and Food Safety regulations, safe methods of work including the handling and use of knives and machinery. Food Hygiene and Safety Level 2 qualification is essential. HACCP level is essential (if not available training will be provided)

To be innovative and able to offer ideas for new menus
Be passionate about creating excellent food with attention to detail
Skills and knowledge in preparation, control and meeting of budgets
