Cardiff University is seeking to recruit Chefs to work as part of the kitchen team. You will be part of the team preparing, cooking and serving meals for students, conference delegates and guests to generally assist in the smooth running of the catering services within the department.
We expect the successful candidate to interact regularly with our customers and to work with the Kitchen Manager and participate in menu development groups to develop new ideas, concepts and food innovations to maximise sales.
The Ideal Candidate Will

• Have a working knowledge of Food Safety and adhering to all policy requirements
The role will require a flexible approach to working hours and is based on working 5 days out of 7 each week, as required, to support the achievement of the department’s goals.
Three posts – Two Open-ended, (52 weeks) positions of 35 hours per week, and one semester time only (34 weeks) position of 35 hours per week.
Salary: £12.16 per hour

Job Description
Job Purpose
To prepare, cook and present meals for students, staff, conference delegates and guests and to generally assist in the smooth running of the Catering Services across Cardiff University, maintaining highest standards of cleanliness and hygiene
The post will involve regular attendance outside normal working hours (evenings, weekends), to support the achievements of the department’s goals.
Key Duties
• Preparing varied, nutritious meals to a high standard of presentation for customers and preparing dinners, lunches and buffets for conferences, weddings and special dinners to the standard as detailed by the operational pack, recipe and method statements, as instructed by the Senior Head Chef.
• Ensuring standards, agreed with and specified by the Senior Head Chef, are maintained, including the maintenance of nutrition and variety for any special dietary requirements.
• Assisting the Senior Head Chef with the planning of menus for across Catering Service, showing consideration for food trends, dietary requirements, allergens.
• Meeting the necessary requirements of hygiene and food safety by monitoring cleaning standards, taking temperatures of both hot and cold food, refrigerators and freezers: recording findings and reporting any variations, in line with Cardiff University Food Safety Policy.
• Employing efficient working practices in the use of all resources, including energy, provisions and equipment.
• Attendance at and supervision of special functions, such as conference dinners, wedding receptions and Gala dinners, in addition to regular daily duties and to provide supervisory cover in times of sickness and annual leave.
• Assisting the Senior Head Chef and Head Chef, when required, in the induction and continuing training and development of staff, and to supervise and train temporary (casual and agency) staff.
• Participating in training appropriate to the position, including compulsory food hygiene training, manual handling, allergen and COSHH training and ensuring that all staff work safely.
• Assisting in the preparation of orders for the purchasing of provisions, receiving and checking deliveries for accuracy and quality; ensure deliveries are stored correctly and in a timely manner. Rotate stock.
• Assist Head Chef with Stock Takes and ensuring control of waste and costs.
• Assisting in the identification of equipment for repair and/or replacement and reporting to maintenance in absence of Head Chef.
• Covering other general duties within the scope of the grade in the event of sickness, absence or variations in workload, both within the usual place of work or elsewhere within Catering Services. To ensure compliance with legal and regulatory requirements in respect of equality and diversity, data protection, copyright and licensing, security, financial and other University policies, procedures and codes as appropriate.
• To abide by university policies on Health and Safety.
• To assist in the investigation and preparation of reports / documents on individual projects as requested.
• To actively participate in the Quality and Customer Care initiatives.
• To attend and actively participate in all training as identified by Senior Head Chef and Head of Catering and Foodservice.
• Perform other duties occasionally which are not included above, but which will be consistent with the role.
The role will require a flexible approach to working hours and will include some out of hours working, including weekend working.

Essential Criteria
• A proven track record of culinary skill is essential to meet the wide variety of requirements, including student meals, restaurant/brasserie menus, conference, events and weddings. High standards of presentation and preparation are expected throughout.
• Hold a recognised cookery qualification equivalent to at least NVQ level 2.
• An understanding of the principles of food safety and the consequences of poor working practices.
• Evidence previous experience in a reasonably wide variety of catering establishments, so as to understand the requirements of the diverse customer requirements and experiences of the University.
• Experience of working within a team and ability to communicate and follow instruction and procedures.
• Experience of working in a customer focused environment with an ability to respond to customer needs, adapting to their requirements accordingly.
• Strong organisation skills.
• Evidence of ability to use email and internet-based applications.
Desirable Criteria
• Level 2 Food Safety.
• Ability to make effective judgements.
• Good proven interactive communication skills with work colleagues.
• Experience of stock control.
• Experience in food and beverage menu design and purchasing from suppliers.
• An interest in environmental concerns which may impact on the catering provision.
• Proven ability to speak/write Welsh or willingness to learn.

CAMPUS SERVICES INFORMATION
Campus Services provides a range of professional support services to students, staff and visitors at Cardiff University.
In terms of catering, there are cafés and restaurants conveniently located across university campuses, in addition to a delivered hospitality service.
Both residential and catering facilities are utilised for conferences and functions during the University’s vacation periods. A purpose built and designed conference centre and conference facility is also available throughout the year.
Residences manages accommodation places for approximately 5,500 students, both catered and self-catered.
Cardiff University Sport exists to provide students and staff with a balanced, high quality and integrated sport service which meets the needs of a broad range of users.
The Nursery offers facilities for children aged between 10 weeks and 5 years and is divided into sections appropriate to the ages and development of the children.
The Campus Services operation is supported by its own central administration functions covering the allocation of residences, human resource and quality, purchasing, facilities, finance, and general administration.
